Thanks for the suggestion! It's a fair point: if the first thing you do every time is press Maximize, the app should remember that.

There's a PR up for it, #404. It adds a switch under Settings → General → Composing called Open the composer full screen. With it on, every new composer opens maximized, including replies, forwards and reopened drafts. You can still press Restore to shrink one back to a window. It's off by default and makes no difference on a phone, where the composer already fills the screen.

This issue will close when the PR merges.
