Thanks for the suggestion! This is now in main (#347) and will be in next week's release, due Monday 21 September.
Drag the sidebar's right edge to make it anywhere from 240px to 480px wide. The handle shows when you hover over the edge. If you tab to it, the arrow keys also change the width, and double-clicking the edge puts it back to the default. The width is saved per device, the same way the message list width is.
Your own --sidebar-w CSS keeps working as before. The saved width only overrides it once you've dragged the edge, and double-clicking hands control back to your CSS.
